I used to be so intimidated by making soup when I first started cooking. After a few attempts, I realized that not only did I have nothing to fear, I absolutely loved making them! Soups are what I call “fool proof.”😉
.
👉It comes down to 3 main things; ✔using your favourite whole veggies, ✔adding enough water/liquids to achieve desired constancy (creamy vs. brothy), and ✔adding herbs ‘n’ spices that pair well with your veggies. The seasoning step takes a bit of practice but really it’s all about using flavours you love.😍
.
🙌I was so happy when this week’s #CNEprogram incorporated a soup recipe. @meghantelpner ’s Gracious Glow Soup totally hit the spot on a crisp autumn day. It features sweet potato, carrots, cauliflower, and homemade curry powder. 👉The full recipe is available on PG 118 of her book “The Undiet Cookbook.”

Hope everyone is having an awesome week! My week is flying by. I really wish I could just pause life sometimes. Grateful that this coming weekend is Canadian Thanksgiving Long Weekend, really looking forward to some good r&r and time with the fam on Sunday.😊 .

I recently developed a tahini 'n' spice oatmeal cookie recipe that turned out amazing! 😍 I was craving chocolate the last time I tested it and tossed in a large handful of dark chocolate chips, creating some NEXT LEVEL tasting cookies.😉🍫

👉My question to you is (because everything tastes better with chocolate!) - can these tasty lil' cookies still be considered an "autumn" treat? I think so, right? Tahini and spice AND chocolate chip oatmeal cookies... or is this too much? 😄

The weather has been so nice in Toronto the last few days that I'm not quite ready to start putting apple or pumpkin spice in my oatmeal yet. As much as I love the fall, a small part of me is still holding onto summer - anyone else? 😊
. 👉In the bowls: my fave vanilla boost oatmeal (glutem/dairy/nut/soy free)

1 cup gf organic quick oats

3 tbsp organic hemp hearts

2 tbsp chia seeds
1 tbsp vanilla collagen (grass fed)

1 2/3 cup coconut milk
1 tsp ground flax

2 tsp high grade Canadian maple syrup . 👉Instructions:

Add all to a small saucepan accept flax and maple syrup. Bring to a light boil,put lid on and then turn off stove. Let sit for 5 minutes (this will help oats cook). Remove lid, stir in flax and maple syrup. Top with preferred fresh fruit. 😉 .
🔅TIP: Add flax and maple syrup last to prevent from cooking-down essential nutrients and flavour.😉 What's in your morning bowl? .

This marked our last “home garden” salad, can’t believe summer is coming to an end. Our cucumber, pepper, basil, oregano, parsley, and thyme plants were officially cleared (tomato plants still going strong💪🍅).
👉 I tossed a bit of everything from the garden into a large bowl, drizzled it with olive oil, apple cider vinegar, sunflower and pumpkin seeds, and called it a good day. 😊
Do you have a garden? How do you store herbs? We were debating on bringing them indoors but instead opted to freeze what’s left. I need indoor herb growing tips for next year – please share plant friends!🌱🌾.

I bought a matcha latte recently and it sucked😐. No beating around the bush here; it was bitter, watery, and kind of gross. Why must a good thing be ruined?! I decided it was the last time I drank a matcha latte from anywhere other than my home (I make THE tastiest matcha lattes!).😍
