Before I share the recipe, here’s a quick matcha run through for all my matcha wondering friends…

What is matcha?

Matcha is a finely ground powder made from green tea leaves, and only its stems are removed during processing. It has 137 times more antioxidants than regular green tea and it’s a great natural detoxifier. Researchers also believe it helps calm the mind and body, and boost mood.

How is matcha used?

This antioxidant super powder is used in a variety ways around the world. Most traditionally, brewed on its own as a tea or added to steamed milk to form a matcha latte. Matcha can also be used in cold smoothies, cake frostings, as a natural food colouring agent, and more.

Does matcha contain caffeine?

Matcha does contain caffeine as it is a type of green tea. Note, the caffeine content in matcha is slightly higher than bagged tea but not as high as a cup of black coffee.

Matcha Collagen Latte (Dairy Free)

Equipment

Ingredients

  • 1/4 tsp organic matcha green tea powder
  • 1 tsp grass fed collagen powder
  • 1 tbsp coconut milk powder
  • 1 1/4 cup boiled water
  • 1/3 cup raw organic cashews or rolled oats if you’re allergic to nuts
  • 3 small-medium Medjool dates or 1-2 tsp raw honey
  • 1/4 tsp vanilla extract
  • Pinch Himalayan salt

Instructions

  • Boil water.
  • In a mug create a “matcha paste” – add first three ingredients into mug (1/4 tsp matcha powder, 1 tsp collagen, 1 tbsp coconut milk powder).
  • Pour 2 tablespoons of boiled water into mug. Mix well with a fork and set aside.
  • Add remaining hot water and ingredients into a high speed blender. Blend on high for 1-2 minutes until smooth and creamy. TIP: If you're blender does not have an air-vent feature, allow hot water to cool for 5-10 minutes or use 1 cup hot water and 1/4 cup cold water – this will help keep the lid from popping off if too much steam builds up.
  • Pour cashew milk mixture into matcha paste mix, stir well, and enjoy!

Notes

  • You can add all ingredients to the blender at once instead of creating the matcha paste. I’ve read creating a paste salvages some of the antioxidants in the matcha powder (not sure how true this is).
  • Matcha powder is a strong green tea; measure the powder carefully – more is not always better. It does contain caffeine.
